The Holiday Bikini – How to Make It

WHere is a simplified take on a cocktail featured on a new menu. It's a large-volume prepared mix that's bursting with essence of the Christmas time, rendering it ideal for your holiday party. Reserve the remaining cordial for morning drinks, sweets, or to mix more rounds of bikinis.

Bikini Recipe

Makes enough for 10 servings

To make the Citrus Syrup (produces 750ml)

300ml fresh clementine juice
200ml fresh lemon juice
500g caster sugar

Ingredients for the Premix (makes 850ml, enough for 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing

Method

To prepare the Cordial: Place the listed ingredients in a saucepan, bring to a light boil, mixing so the sugar melts. After that, remove from the burner and leave to reach room temperature entirely. Pour to a clean bottle, close it and store in the refrigerator, where it will keep for around a month.

For the Cocktail Base: Combine the specified liquid ingredients into a big jug, leave to sit for an hour, then pass it through preferably using a fine cloth, so it's completely strained.

To serve: Add 85ml of the batch mix into a cocktail shaker packed with ice, and stir lightly for about 60 seconds until cold. Pour into a chilled martini glass or similar, garnish with a few cranberries and finish by giving it a brief mist with the mandarin essence above the glass.
